Chicken & Mango Summer Salad
Servings 4 people
Ingredients
- 750 g Chicken Thigh or Breast Fillets
- 1 Red Capsicum
- 1 Lebanese Cucumber
- 1 Avocado
- 1 Mango (Large)
- 1 Coriander bunch
- 1 Cos Lettuce
- Salt & Pepper
- 5 tbsp Olive Oil
- 2 Garlic Cloves
- 5 tbsp Soy Sauce
- 1 Ginger
Dressing
- 2 tbsp Olive Oil
- Juice of 2 limes
- 2 tsp Seeded Mustard
Instructions
Chicken Preparation
- Add Chicken to a dish and coat with mixture of diced garlic, ginger and soy sauce. Combine well and set aside.
Salad Preparation
- Thinly slice cucumber, red capsicum, avocado, mango and coriander. Break up lettuce leaves and combine in big salad bowl - tossing well.
Dressing
- Combine lime juice, seeded mustard, olive oil and salt and pepper
BBQ Chicken
- Add marinated chicken to hot bbq plate and cook for 3-5 minutes, turning once and cooking until ready
- Remove chicken from hotplate and slice
Assembling Salad
- Combine chicken, salad and dressing and toss together. Salt and pepper to taste to serve
