Chicken & Mango Summer Salad

Servings 4 people


  • 750 g Chicken Thigh or Breast Fillets
  • 1 Red Capsicum
  • 1 Lebanese Cucumber
  • 1 Avocado
  • 1 Mango (Large)
  • 1 Coriander bunch
  • 1 Cos Lettuce
  • Salt & Pepper
  • 5 tbsp Olive Oil
  • 2 Garlic Cloves
  • 5 tbsp Soy Sauce
  • 1 Ginger


  • 2 tbsp Olive Oil
  • Juice of 2 limes
  • 2 tsp Seeded Mustard


Chicken Preparation

  • Add Chicken to a dish and coat with mixture of diced garlic, ginger and soy sauce.  Combine well and set aside.

Salad Preparation

  • Thinly slice cucumber, red capsicum, avocado, mango and coriander. Break up lettuce leaves and combine in big salad bowl - tossing well.


  • Combine lime juice, seeded mustard, olive oil and salt and pepper

BBQ Chicken

  • Add marinated chicken to hot bbq plate and cook  for 3-5 minutes, turning once and cooking until ready
  • Remove chicken from hotplate and slice

Assembling Salad

  • Combine chicken, salad and dressing and toss together. Salt and pepper to taste to serve
